Under the climatic and geographic conditions of Central Europe, the photolytical half-live of Sorbic acid ranges between 17.3 days in June and 6.7 years in December, depending on the seasonally varying solar irradiance intensity. This indicates that in the case of Sorbic acid, photodegradation in water is only a process of minor importance regarding the abiotic degradation processes under environmentally relevant conditions.
