The dissociaton constant of the substance were derived from the single components of the substance: fructose (CAS 57-48-7, pKa=13.83 at 20 °C), glucose (CAS 50-99-7, pKa=12.92 at 0 °C), sucrose (CAS 57-50-1, pka=12.62 at 0 °C) and isomaltulose (CAS 13718-94-0, 12.5 at 20 °C). No dissociation could be determined under naturally relevant pH conditions (pH = 5 -9).
